1 pound ground turkey

1 tablespoon olive oil

1 small onion diced

2 clove garlic minced

1 tablespoon chili powder

1 teaspoon cumin

0.5 teaspoon paprika

0.5 teaspoon oregano

pinch salt

1 cup frozen corn kernels

1 jalapeno pepper pepper seeded and finely chopped

0.25 cup red bell pepper diced

0.25 cup fresh cilantro chopped

1 lime lime

8 small flour tortilla

1 cup cooked white rice

2 tablespoon fresh cilantro chopped

1 tablespoon lime juice

1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

2. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.

3. Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for an additional 2 minutes to let the spices blend.

4. In a separate skillet, heat a little olive oil and add the frozen corn kernels. Cook for about 5 minutes, until lightly charred. Transfer to a bowl and let cool.

5. To make the roasted corn salsa, combine the roasted corn kernels, jalapeno pepper, red bell pepper, fresh cilantro, and lime juice in a bowl. Season with salt and pepper to taste.

6. In a small saucepan, cook the white rice according to package instructions. Once cooked, stir in the fresh cilantro and lime juice.

7. Warm the flour tortillas in a dry skillet or microwave.

8. To assemble the tacos, spoon some of the turkey mixture onto each tortilla. Top with the roasted corn salsa and a scoop of cilantro rice.

9. Serve the tacos hot and enjoy!
