Spicy Mapo Tofu with Garlic Fried Rice

1 block firm tofu diced
2 clove garlic minced
1 tablespoon ginger minced
2 tablespoon chili bean paste
1 tablespoon soy sauce
1 tablespoon cornstarch dissolved in 2 tablespoons water
1 cup vegetable broth
2 green onion green onion finely chopped
1 cup cooked rice
4 clove garlic minced
2 tablespoon soy sauce
0.5 teaspoon sesame oil
0.25 teaspoon white pepper
2 tablespoon vegetable oil for frying

1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the diced tofu and cook until golden brown on all sides, about 5–7 minutes. Remove the tofu from the skillet and set aside.
2. In the same skillet, heat another tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté until fragrant, about 1–2 minutes.
3. Add the chili bean paste and soy sauce to the skillet, and stir to combine with the garlic and ginger. Cook for another minute.
4. Add the vegetable broth to the skillet and bring to a simmer. Stir in the dissolved cornstarch and cook until the sauce thickens, about 3–5 minutes.
5. Return the cooked tofu to the skillet and toss to coat it in the sauce. Cook for an additional 2–3 minutes, until the tofu is heated through.
6. To make the garlic fried rice, heat 2 tablespoons of vegetable oil in a separate skillet. Add the minced garlic and sauté until fragrant, about 1–2 minutes.
7. Add the cooked rice to the skillet and stir to coat it in the garlic oil. Drizzle in the soy sauce, sesame oil, and white pepper, and stir to combine. Cook for another 2–3 minutes, until the rice is heated through.
8. Serve the spicy mapo tofu over the garlic fried rice, garnished with chopped green onions.
