1 pound beef stew meat thinly sliced

2 tablespoon vegetable oil

1 onion onion thinly sliced

4 clove garlic minced

1 tablespoon ginger grated

0.25 cup gochujang Korean chili paste

4 cup beef broth

2 cup water

1 cup kimchi chopped

8 ounce rice noodles

4 whole green onion sliced

clove sesame seeds for garnish

1. Heat the vegetable oil in a large pot over medium heat. Add the sliced beef and cook until browned. Remove from the pot and set aside.

2. In the same pot, add the sliced onion, minced garlic, and grated ginger. Cook until the onion is softened.

3. Add the gochujang, beef broth, and water to the pot. Stir well to combine.

4. Add the browned beef back to the pot along with the chopped kimchi. Bring the stew to a boil, then reduce the heat and simmer for 1 hour.

5. While the stew is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

6. Serve the spicy Korean beef stew over the rice noodles. Garnish with sliced green onions and sesame seeds.
