1.5 pound pork tenderloin
0.25 cup soy sauce
0.25 cup honey
2 clove garlic minced
1 teaspoon ginger grated
2 tablespoon rice vinegar
2 tablespoon hoisin sauce
0.25 teaspoon red pepper flakes
2 tablespoon vegetable oil
4 head baby bok choy halved
2 clove garlic minced
1 tablespoon sesame oil
1 tablespoon soy sauce
4 cup cooked jasmine rice

1. In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, hoisin sauce, and red pepper flakes. Set aside.
2. Slice the pork tenderloin into thin strips. Place the pork in a zip-top bag and pour the marinade over it. Seal the bag and marinate in the refrigerator for at least 30 minutes, or overnight for more flavor.
3. Heat vegetable oil in a large skillet or wok over medium-high heat. Remove the pork from the marinade, reserving the marinade. Add the pork to the hot skillet and cook until browned and cooked through, about 4–5 minutes.
4. While the pork is cooking, heat sesame oil in another skillet over medium heat. Add minced garlic and cook for 1 minute. Add bok choy halves and cook until tender, about 3–4 minutes. Drizzle with soy sauce and remove from heat.
5. In a small saucepan, pour the reserved marinade and bring to a simmer over medium heat. Cook for 5 minutes to thicken the glaze.
6. Serve the cooked pork over a bed of jasmine rice, topped with the garlic bok choy. Drizzle the thickened glaze over the pork and rice. Enjoy!
