Crispy Beer-Battered Cod with Cheesy Garlic Mashed Potatoes and Roasted Spicy Brussels Sprouts

4 fillet cod

1 cup all-purpose flour

1 teaspoon baking powder

0.5 teaspoon salt

0.25 teaspoon black pepper

1 cup beer light lager

4 large potato

0.5 cup milk

4 tablespoon butter

2 clove garlic minced

1 cup shredded cheddar cheese

1 pound brussels sprout

2 tablespoon olive oil

0.5 teaspoon paprika

0.25 teaspoon cayenne pepper

1. Preheat the oven to 425°F (220°C).

2. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

3. Slowly pour in the beer while whisking until the batter is smooth.

4. Dip the cod fillets into the batter, allowing any excess to drip off.

5. Heat vegetable oil in a deep skillet or frying pan over medium-high heat.

6. Fry the cod fillets for 3–4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

7. Peel and chop the potatoes into small chunks. Boil them in salted water until tender, then drain.

8. In a separate saucepan, heat the milk, butter, and minced garlic over low heat.

9. Mash the cooked potatoes with the heated milk mixture until creamy and smooth. Stir in the shredded cheddar cheese.

10. Trim the Brussels sprouts and cut them in half. Toss them with olive oil, paprika, cayenne pepper, salt, and pepper.

11. Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20–25 minutes, or until they are crispy on the outside.

12. Serve the crispy beer-battered cod fillets with the cheesy garlic mashed potatoes and roasted spicy Brussels sprouts. Enjoy!
